The dairy industry has spent two years arguing about milk price. It has spent far less time on a question that sits entirely within a processor's control: how much of the value created inside the factory never reaches an invoice.
This is the uncomfortable premise behind More from Milk, The Dairy Mail's lens on where the next pound of dairy growth will actually come from. Global milk production passed one billion tonnes in 2025, on IFCN figures, while mature markets struggle to absorb the extra volume. If growth cannot come from selling more litres, it has to come from capturing more value from the litres already in the system. The most immediate place to look is not the shelf. It is the drain.
The factory you are not measuring
Walk any processing site and the visible economy is obvious: milk in, product out, the two weighed and reconciled. The invisible economy runs alongside it and is rarely metered with the same discipline. Fat and solids carried out in wash water. Heat vented to atmosphere after a single use. Water bought at potable rates, used once, then paid for again as trade effluent. Product downgraded or dumped after a quality failure that never appears as a line in the sales ledger.
